7-Bone Roast

This is an easy and delicious main course for any special occasion. The recipe came from my friend, Julie, after she served it to a group of friends many years ago. Just add bread or rice and a salad for a complete meal. The aroma while it’s cooking fills the house!

1 (4-5 lbs.) 7-bone chuck roast
1/2 C water
1 C red wine
1 envelope Lipton Onion Soup Mix
1 onion, chopped
Carrot slices
Potato cubes
Garlic, minced (1-2 cloves or to taste)

Place roast in large pan; season with salt and pepper. Add water and wine, sprinkle with soup. Cover with foil. Cook 1 hour at 325F.

Turn, season and cover again. Cook another 1-1/2 hours.

Add veggies and garlic. Return cover and cook 1 more hour.

Total cooking time: About 3-1/2 to 4 hours.

To cook in a crockpot:
Place onion, carrot slices and potato cubes in bottom of crock pot. Place roast on top and season with salt and pepper. Add water and wine, sprinkle with soup. Cover and cook on low for 8-10 hours.
