My dad got this chili recipe from a fellow detective he worked with on the Los Angeles Police Department. We nicknamed it LAPD Chili. It’s easy to make and very flavorful. If you can’t find French’s Chili-O, you can substitute another brand of powdered chili mix. Or, a healthier alternative would be to make your own mix using chili powder.
1 package French’s Chili-O mix
1 15-oz. can Hunts small red beans, undrained
1 can tomato soup
1 small can tomato paste
1 lb. ground beef
1 onion, chopped fine
2 yellow chiles, chopped fine (optional, though these are not very hot)
Brown meat and onion. Add Chili-O, mix well. Add remaining ingredients (do not drain liquid from beans). Bring to a boil, stirring often.
Serve with bowls of shredded cheddar cheese and chopped onions, hot crusty bread, and a green salad.
