Jim’s cousin’s wife, Karen, served this delicious dish when we went to visit shortly after they moved into their then-new home. It’s a great company dish.
2 1-1/2 to 2-lb. broiler-fryers, cut up
1/2 cup butter or margarine, melted
1/2 cup honey
1/4 cup prepared mustard
1 tsp. salt
1 tsp. curry powder
Place chicken pieces in shallow baking pan, skin side up.
Combine butter, honey, mustard, salt and curry powder, mix well.
Pour over chicken, bake at 350F for 1-1/4 hours, basting every 15 minutes until chicken is tender and nicely browned.
Serves 4-6.
