These are my mom’s salmon patties. As she says, they’re something she “just throws together, they’re so easy!”. She threw them together one night when I visited after work, and I really enjoyed them. With the exception of the salmon and the eggs, she doesn’t measure. As I said, she “just throws them together”. If possible, use Trader Joe’s Wild Alaskan Pink Salmon.
1 15-oz. (approx.) can salmon
2 beaten eggs
Cracker crumbs (about 1/2 cup, enough to hold mixture together)
Chopped olives
Chopped celery
Chopped onions
Grated cheddar cheese
Garlic powder
Ground Black Pepper
Dill weed
Olive Oil for frying
Combine all ingredients except oil; mix well and form into patties.
Fry patties in olive oil over medium heat until brown.
Makes several patties.
