I was seeking a light but hearty coleslaw salad without any sugar or creamy dressing. I created this version from ingredients we already had on-hand! It has lots of flavor and crunch and is very quick to throw together. For additional nutrition and a complete light meal, add shredded cooked chicken. This salad is often requested by family and friends for parties, picnics, and potlucks.

Chewy Fruit and Oatmeal Bars

You can’t beat bars for a quick solution to the cookie craving, and this one is both delicious and healthy. This recipe was inspired by the original printed on the back of a Quaker Oats oatmeal container. Every time I make them I’m asked for the recipe. It’s very versatile — you can use any dried fruit, nuts, and even chocolate chips. Any way you make it, it’s a great, nutritious energy snack.
